Caribbean Pineapple Shrimp Skewers

Ingredients:

  • 1 tablespoon paprikashrimp skewer
  • 2 teaspoons curry powder
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons ground allspice
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground red pepper
  • 2 pounds unpeeled jumbo shrimp (16-20 count), peeled and deveined
  • Non-stick cooking spray
  • 1 Pineapple, peeled, cored, and cut into thick chunks

Directions:

Pre-heat grill on high.

Combine first 10 ingredients in a small bowl and mix in shrimp.

Skewer shrimp and one pineapple alternatively on skewers. Brush with oil or spray with non-stick cooking oil and place on hot grill. Cook for 2-3 minutes on each side until pink.

Serve immediately.

Makes about 6 skewers

 

Grilled Sweet Potato Skewers


Ingredients:

  • Sweet potatoes
  • Red bell peppers, cut in bite-size squaressweet potatoe skewer
  • red onion, cut in bite-size squares
  • Non-stick cooking spray
  • Salt and pepper
  • smoked paprika
  • garlic powder
  • dried basil
  • dried oregano

Directions:
Scrub and dry sweet potatoes. Pierce several times with a fork. Bake or microwave until just knife-tender. Cool before slicing into cubes.

Chop remaining vegetables into bite-size squares. Thread sweet potatoes and vegetables onto individual bamboo chopsticks. Spray with non-stick cooking spray  and season with kosher salt and freshly ground black pepper. Combine dry spices in a bowl and sprinkle over each side of the skewers.

Preheat outdoor grill. Grill skewers until the vegetables are tender and slightly charred.

Serve immediately.
